Harvesting and vinification:The hand-picked grapes go through a double manual selection. The entire wine making process
takes place at a controlled temperature; a first spontaneous fermentation is followed by separation of the seeds. Following a long period of ‘submerged cap’ maceration for about 30 days, malolactic fermentation takes place in steel.
Aging:
6 months in large French wooden barrels (40hl), with subsequent aging in French barriques for 6 months. Final refinement in steels on fine lees for 6 months. The wine ages 12 months in bottle before being released onto the market.
