A spicy twist of evolution that distinguishes Simbiotico is linked to the fact that no sulphur dioxide
is ever used in production. The absence of added sulphur dioxide makes this wine free to express itself.
Its nose is very broad: smoky and liquorice notes, together with toasted walnut and dried fruit, and finally ripe yellow fruit (apple and peach).
The game of evolution is also perceived in the mouth,but the finesse of the bubbles harmonises the
Simbiotic, making it balanced and never opulent. A rich but very drinkable Franciacorta.
