It is the result of a decade of experience in winemaking without the use of sulfur dioxide. This means that the wine contains only the light amount of sulphites that are naturally generated during the
fermentation.
Simbiotico enchants for its openness and the evolution that this winemaking method allows to achieve, even with shorter aging period. The wine is "free" from any cage, it is broad on the nose and
in the mouth you can perceive the role of evolution, harmonized by the finesse of the bubble, which makes it balanced and never opulent. A rich but highly drinkable Franciacorta

ORGANOLEPTIC CHARACTERISTICS:
Straw yellow color with just a few greenish hints. The nose is dominated by sensations of broom, then ripe cedar and bread crust.

Perfect aperitif, it pairs happily with raw fish and vegetable-based dishes
