DESCRIPTION:
is the historical grape variety and base of Prosecco from which the plant itself takes its name. The harvest takes place at the beginning of September, followed by a soft crushing of the grape and a period of rest with the Martinotti/Charmat method. The wine thus obtained is sparkling, fresh, balanced and lively with hints of apple, lemon and white flowers.

ALCOHOL: 10,5% vol.
RESIDUAL SUGAR: 10-12 (g/l)
ACITÌDITY: 5.3-5.4 (g/l)
SERVING TEMPERATURE: 8°C-10°C
VINIFICATION: The soft pressing of the grapes is followed by the vinification with selected yeasts at controlled temperature of 16-17°C. After a stop of a few months follows the refermentation in autoclave with Charmat method
MATCHING: Perfect as an aperitif or with delicate first courses based on vegetables or fish.
