SYSIPHOS - Solaris Vigneti delle Dolomiti IGT

 

Vineyard: at 1200 meters of altitude, in Anterivo in South Tyrol in the midst of meadows and woods, the Solaris vines grow - on very sunny terraces and exposed to the mild breeze of the Garda Lake.

The soil is composed of sand, clay and silt and is rich in nutrients such as nitrogen, phosphorus, potassium and several others.

The vines are resistant to Oidium and Peronospora. So there is no need for any treatment.

 

Vinification: the grapes are de-stemmed and crushed with subsequent cryomaceration at about 10 hours. The next step is a refinement on the fine steel stools and finally the wine is bottled after six months.

 

The wine: the Solaris - a rarity and a peculiarity - is full, of remarkable structure, which recalls memories of elder and an elegant floral quirk. It is wrapped in a touch just mentioned without sacrificing freshness, flavour and fragrant aromatic intensity from high altitude wines.

 

Recommendations: Solaris is suitable for appetizers, asparagus dishes, fish meals and tasty cheeses. Also enjoy a glass of wine without accompanying it with any food.

 

The temperature: the wine should be served at 8 ° - 10 °.

 

The maturity of the wine: it is recommended to drink the Solaris preferably in the first four years after bottling.
