The Vineyard & Terroir: For this special selection, the Kollerhof winery cultivates an exclusive plot in Tramin, one of Alto Adige’s most historic and prestigious wine-growing villages. Situated at approximately 350 meters above sea level, the vineyard spans a mere 4,000 square meters, making "Plon" a strictly limited, rare gem. The unique terroir is defined by limestone-rich sedimentary rock, which imparts a distinctive character to the wine. Furthermore, the significant diurnal temperature variations (day-night temperature swings) on the western slope contribute to the high quality and complexity, allowing the Chardonnay grapes to achieve optimal aromatic ripening.
 
Vinification & Aging: Within this micro-plot, yields are strictly managed and reduced directly in the vineyard. Following a highly selective harvest, the grapes undergo gentle pressing. The defining feature of its vinification is that both temperature-controlled and malolactic fermentation take place entirely in oak barrels. The wine then matures in these barrels for 12 months on its fine lees, developing a creamy texture and a complex structure. Afterward, it spends an additional six months in stainless steel tanks to settle and harmonize naturally before bottling. Once bottled, the wine rests for at least 12 months to achieve flawless balance and reach its peak expression.
 
Tasting Notes: In the glass, it displays a brilliant straw-yellow color with golden highlights. On the nose, "Plon" captivates with complex aromas of ripe exotic fruit, delicate vanilla, and an elegant, terroir-driven minerality. The palate reveals an expressive structure with a soft, round fullness, masterfully refined by the malolactic fermentation and oak aging.
 
Serving Suggestions: The Chardonnay "Plon" is an outstanding match for refined cuisine, pairing beautifully with rich fish dishes, white meats, or well-seasoned appetizers. To fully appreciate its aromatic depth and subtle oak nuances, it should be served at a temperature of around 10°C–12°C.
